Frittata with Quinoa & Avocado

Frittata made with quinoa and avocado. A light drizzle of Curry Gewertz Ketchup for added flavour. Not a great shot ad hunger demanded I make it quick ;) One and a half days to go with kidney/digestion cleanse

How to:

2 large eggs, 1 tsp oil, 2 tbsp water, and a dash of salt & pepper

1 cup cooked quinoa

½ avocado, sliced

Well beat the eggs with oil, water, and salt & pepper to flavour (the oil and water helps it to be light and fluffy)

Then add cooked quinoa into the egg batter and mix well, I use left overs.

Heat oven safe skillet on stove on med-low, add 1 tbsp oil, pour egg batter into pan, add avocado slices on top, and let cook for one minute on medium heat, then move skillet under preheated broiler for about 5-10 mins, until egg sets, and frittata is slightly browned and it will be a bit puffed up.

Loosen frittata from pan and place on plate to serve. You may top with any condiments you might like. I would have grated some parmesan, but I’m avoiding dairy, thus I used a drizzle of a German curry Gewertz ketchup for a change in flavour.
