cozy and filling : layered baked fish
Starting at bottom of baking pan or casserole dish, layer sliced yellow onions, fish filets, chopped parsley, olive oil/salt/herbs/pepper, and lastly the thinly sliced yukon gold potatoes. Drizzle or brush some more olive oil + salt/herbs/pepper as to your liking.
Baked 350ºF for 45 min covered, then remove cover, and bake another 20 min to crisp up the potatoes.
